Roast satay (peanut) broccoli - cooking
A 'satay' sauce is a peanut sauce. It comes from Indonesia. This recipe uses homemade satay sauce for roasted broccoli (broccoli cooked in the oven). It is sweet and delicious!

Ingredients
- Broccoli
- 2 cloves garlic
- A small piece of ginger
- Olive oil
- Chilli (optional)
- Salt
- Pepper
- Noodles (I use soba noodles, but any work!)
For the satay sauce:
- 3 tbsp peanut butter - crunchy or smooth
- 3 tbsp lemon juice (juice from 1/2 a small lemon)
- 1 tbsp soy sauce
- 1 tsp honey
- Chilli flakes (optional)
Method
- Pre-heat the oven to 180 degrees celsius.
- Cut the broccoli into thin slices. Put it on a baking tray.
- Chop garlic, ginger, and chilli into small pieces. Add to the broccoli.
- Add oil, salt and pepper to the tray.
- Roast it in the oven for 20-30 minutes, until the broccoli is slightly brown.
- Now, make the sauce. Mix peanut butter, lemon juice, soy sauce, and honey. Add boiling water slowly, until you can pour the sauce. It is still thick.
- Cook the noodles in boiling water until they are soft.
- Put the noodles and cooked broccoli on a plate. Pour the peanut sauce over the top.
- Enjoy!
